Flourless Double Chocolate Protein Cookies

Preparation Time: 5 minutes. Bake time: 8-10 minutes. Makes 24 cookies.

Ingredients:

    • 1 ripe banana, mashed

    • 1 c almond butter

    • 1/4 c maple syrup

    • 1 egg, lightly beaten

    • 1 tsp vanilla

    • 1/4 c cocoa powder

    • 1/2 tsp baking soda

    • 1/2 tsp cinnamon

    • 1/2 c chocolate chips

Method:

Preheat oven to 350 degrees. Combine all ingredients in one bowl and mix thoroughly with wooden spoon or electric mixer. Drop batter onto parchment paper lined baking sheet and bake for 8-10 minutes. Allow to cool slightly before transferring to cooling rack. Serve when cooled completely.

Baking with protein powder: Not too sweet, and plenty of flavor! Gluten-free protein cookies are a healthier option for dessert or snacks between meals.
