Preparation Time: 10 minutes. Bake time: 12-15 minutes. Makes 12 bars
1 stick butter, room temperature
1/4 c coconut sugar
1 1/2 tsp vanilla
1/4 maple syrup
1 1/2 tsp baking powder
2 c quick oats (gluten free)
1 scoop Eidopro Protein Powder
3 tbsp chia seeds
1 c mini chocolate chips
Preheat oven to 350 degrees. In large bowl, cream together butter and sugar. Stir in eggs, vanilla and syrup and beat until smooth. In medium bowl, mix together baking powder, oats and Eidopro Protein Powder. Add dry ingredients to butter mixture and stir until combined. Mix in chia seeds and chocolate chips. Dump mixture onto parchment-lined baking sheet and form into 1 inch thick square. Using wet hands to pat down and shape evenly. Bake for 12-15 minutes until edges are slightly browned. Transfer to wire rack and cool completely before cutting into 12 bars. Store in fridge or freezer.
