Preparation Time: 10 minutes. Cool time: 1 hour. Makes 12 bars
30 dried medjool dates, pitted and roughly chopped
1/2 c shredded, unsweetened coconut
2 scoops Eidopro Protein Powder
4 tsp lime juice
1/4 c dried apricots
1/4 c chia seeds
1/4 c sunflower seeds
1/4 c hemp hearts
Put dates, coconut, Eidopro Protein Powder and lime juice in food processor. Process until well combined and smooth - mixture should start to form into a ball. Add apricots and seeds and process again until combined. You should still be able to see some of the seeds and fruit pieces. Remove from processor and use your hands, if necessary, until all the seeds are mixed in well. Form into 1 inch thick rectangle on parchment paper. Wrap, and refrigerate for 1 hour, or until firm. Cut into 12 bars with damp knife. Store in fridge or freezer.
